Breakfast in our home is never complicated. It is five minutes, maximum because there is a seven-year-old to get to school, a café au lait to foam properly and a morning that deserves to start beautifully despite the rush.
These are the four breakfasts we actually make, week after week, in our Barcelona kitchen. Simple enough for a school morning. Good enough to feel like a small luxury.
1. The Soft Egg Plate
Two organic soft-boiled or poached eggs, a slice of good sourdough, half an avocado with flaky salt and lemon. Ten minutes, one pan, zero effort. It looks like something from a Parisian café and tastes even better.
The secret is quality eggs. Nothing else.
2. The Five-Minute Porridge
Oats cooked with water or oat milk, topped with cashew butter, a drizzle of organic honey or maple syrup. That’s it. My son asks for this before school more often than anything else, which tells you everything you need to know.
I use cashew butter because of allergies in our home, but it has become my genuine preference. It is creamier and more delicate than almond butter, and it melts into warm porridge beautifully.
3. Pan con Tomate with Sheep’s Cheese
If you live in Barcelona, this needs no introduction. If you don’t : it is simply toasted bread rubbed with ripe tomato, drizzled with good olive oil and topped with a slice of aged sheep’s cheese (or any topping you can think of).
It takes two minutes and tastes like Sunday. And it is the breakfast that reminds me, every single morning, why I chose to build my life in this city.
4. The Two-Minute Pain Perdu
One egg, a splash of milk, a slice of brioche or bread, thirty seconds per side in a hot pan. Top with fresh fruit or a handful of frozen raspberries warmed in the pan. Done.
My son thinks this is a treat. I let him believe it. It costs almost nothing, takes almost no time and makes an ordinary Tuesday morning feel like a small celebration.
The Café au Lait
In Spain, the morning « cafe con leche » is mandatory whether you take it at your local coffee place or at home. It has become my favourite : strong espresso, warm frothed milk, nothing else. It is the non-negotiable punctuation mark at the end of our morning routine.
A good milk frother is one of the highest-return kitchen investments I have ever made. It costs almost nothing and turns an ordinary coffee into something that feels genuinely indulgent.
Breakfast as a Family Ritual
We believe breakfast is the most important meal of the day, not just nutritionally, but emotionally. It is the one moment before the world takes over when we are all together, unhurried, present.
We are « lucky enough » to have a child who wakes (really) early, which means breakfast in our home is never skipped, never rushed past, never eaten alone. From April, when the Mediterranean mornings turn warm and golden, we take it outside on the terrace. Coffee steaming, raspberries defrosting, the Barcelona light doing what only Barcelona light can do.
It is my favourite thirty minutes of the day.
The Real Secret
None of these breakfasts require skill, time, or elaborate ingredients. Just the decision that your morning is worth showing up for.
